<p>This chapter discusses the current (and potential) applications of HPH/ UHPH to produce bioactive-loaded nanostructures for encapsulation of food bioactive compounds (lipids, vitamins, phenolic antioxidants, minerals, flavors, or colors) and outlines recent research on nanostructured materials aimed at producing scalable and nontoxic products.</p>
